Open-Face Chicken Patty Recipe

Ingredients:

  • 1 package Happy Life Ranch Cajun Chicken Patties
  • 1 onion
  • 6-10 mushrooms (Bella or Button)
  • ½ cup mayonnaise
  • Happy Life Ranch spice mix
  • Happy Life Ranch butter or ghee
  • Optional: Your favorite sliced bread or romaine lettuce

Instructions:

  1. Prepare the Mayo
    • Mix ½ cup of mayonnaise with the Happy Life Ranch spice mix (spices coming soon).
    • Ideally, let it sit overnight for better flavor, but it can be made fresh when preparing the meal.
  2. Prepare the Veggies
    • Slice the onions and mushrooms.
    • Sauté them in butter or ghee until softened.
    • Add a little garlic.
    • Set aside.
  3. Cook the Chicken Patties
    • In a skillet (iron skillet preferred), add butter or ghee.
    • Grill the chicken patties directly from frozen.
  4. Toast the Bread
    • Toast one side of each slice of bread in a skillet with butter or ghee.
    • For a low-carb option, skip the bread and use romaine lettuce.
  5. Assemble the Plate
    • Place the toasted bread (or romaine lettuce) on a plate.
    • Spread the spiced mayo generously on top.
    • Add the cooked chicken patty, then top with the sautéed onions and mushrooms.

Ready to Serve!
