For the Pork Chops and Gravy:
- 4 bone-in or boneless pork chops
- 1 cup all-purpose flour (for dredging and optional roux)
- ¼ cup olive oil (or any cooking oil of choice)
- 2 large green peppers, sliced
- 1 large onion, sliced
- 2 packets brown gravy mix (optional alternative to homemade gravy)
- 1 cup water (for homemade roux or per gravy mix instructions)
For the Rice:
- 2 cups long-grain white rice
- 2 cups water
Seasonings:
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp granulated garlic (optional but highly recommended)
Optional Garnish:
- Hot sauce (to take the dish to the next level)
Instructions
Step 1: Cook the Rice
- Bring 2 cups of water to a boil in a medium pot.
- Add a pinch of salt, then stir in the rice.
- Cover, reduce heat to low, and simmer for 18-20 minutes, or until the rice is tender and the water is fully absorbed.
Step 2: Prepare the Pork Chops
- Season the pork chops on both sides with salt, pepper, and granulated garlic.
- Dredge the pork chops in flour, shaking off any excess.
Step 3: Sear the Pork Chops
- Heat the olive oil in a large cast-iron skillet over medium-high heat.
- Add the pork chops and brown for 3-4 minutes per side until golden. Remove and set aside.
Step 4: Make the Gravy
Option 1: Homemade Roux
- In the same skillet, whisk 2-3 tablespoons of the leftover flour into the remaining oil. Cook over medium heat, stirring constantly, until the roux is golden brown (about 2-3 minutes).
- Gradually whisk in 1 cup of water until smooth, creating a rich gravy.
Option 2: Gravy Mix
- Prepare the gravy according to the packet instructions, using 2 cups of water.
Step 5: Combine and Simmer
- Add the sliced green peppers and onions to the skillet with the gravy. Stir to combine.
- Nestle the pork chops back into the skillet, covering them with the gravy and vegetables.
- Reduce the heat to low, cover, and let everything simmer for at least 30 minutes. This will tenderize the pork chops and meld the flavors.
Step 6: Serve
- Scoop a serving of rice onto each plate.
- Place a pork chop on top, then ladle the gravy and vegetables over the rice and pork chop.
- Optional: Add a few dashes of hot sauce for extra flavor.
