Ingredients

Directions

Ingredients

For the Pork Chops and Gravy:

  • 4 bone-in or boneless pork chops
  • 1 cup all-purpose flour (for dredging and optional roux)
  • ¼ cup olive oil (or any cooking oil of choice)
  • 2 large green peppers, sliced
  • 1 large onion, sliced
  • 2 packets brown gravy mix (optional alternative to homemade gravy)
  • 1 cup water (for homemade roux or per gravy mix instructions)

For the Rice:

  • 2 cups long-grain white rice
  • 2 cups water

Seasonings:

  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp granulated garlic (optional but highly recommended)

Optional Garnish:

  • Hot sauce (to take the dish to the next level)

Instructions

Step 1: Cook the Rice

  1. Bring 2 cups of water to a boil in a medium pot.
  2. Add a pinch of salt, then stir in the rice.
  3. Cover, reduce heat to low, and simmer for 18-20 minutes, or until the rice is tender and the water is fully absorbed.

Step 2: Prepare the Pork Chops

  1. Season the pork chops on both sides with salt, pepper, and granulated garlic.
  2. Dredge the pork chops in flour, shaking off any excess.

Step 3: Sear the Pork Chops

  1. Heat the olive oil in a large cast-iron skillet over medium-high heat.
  2. Add the pork chops and brown for 3-4 minutes per side until golden. Remove and set aside.

Step 4: Make the Gravy

Option 1: Homemade Roux

  1. In the same skillet, whisk 2-3 tablespoons of the leftover flour into the remaining oil. Cook over medium heat, stirring constantly, until the roux is golden brown (about 2-3 minutes).
  2. Gradually whisk in 1 cup of water until smooth, creating a rich gravy.

Option 2: Gravy Mix

  1. Prepare the gravy according to the packet instructions, using 2 cups of water.

Step 5: Combine and Simmer

  1. Add the sliced green peppers and onions to the skillet with the gravy. Stir to combine.
  2. Nestle the pork chops back into the skillet, covering them with the gravy and vegetables.
  3. Reduce the heat to low, cover, and let everything simmer for at least 30 minutes. This will tenderize the pork chops and meld the flavors.

Step 6: Serve

  1. Scoop a serving of rice onto each plate.
  2. Place a pork chop on top, then ladle the gravy and vegetables over the rice and pork chop.
  3. Optional: Add a few dashes of hot sauce for extra flavor.

Tips for Success

  • Don’t Skip the Sear: Browning the pork chops adds deep flavor to the dish.
  • Customize the Gravy: Add a splash of Worcestershire sauce or a teaspoon of Dijon mustard for an extra layer of flavor.
  • Make It a Meal: Serve with a side of greens or cornbread for a complete Southern-inspired dinner. Or make a sammie with a side of rice.

Enjoy your smothered pork chops with rice and gravy—a dish that’s as comforting as it is delicious!
