Ingredients

Directions

Ingredients:

  • Greek Chicken Patties: 1 package Happy Life Ranch Greek chicken patties
  • Veggies
    • 1 onion (sliced)
    • 1 tomato (sliced)
    • 1 cucumber (sliced)
  • Tzatziki Sauce
    • 1 cucumber (grated and squeezed dry)
    • 1 cup Greek yogurt
    • 1 tbsp fresh lemon juice
    • 1 garlic clove (minced)
    • 1/4 tsp sea salt
    • 1 tbsp fresh dill (chopped)
    • 1 tbsp fresh mint (chopped, optional)
  • Extras
    • Happy Life Ranch spice mix (optional)
    • Happy Life Ranch butter or ghee
    • Bread of choice (sliced bread, pita bread, or romaine lettuce for low-carb)

Instructions

1. Make the Tzatziki Sauce

  • Grate and Drain Cucumber: Use the largest holes of a box grater. Squeeze out excess water by pressing the grated cucumber over the sink or between kitchen towels.
  • Combine Ingredients: In a bowl, mix the cucumber, Greek yogurt, lemon juice, garlic, sea salt, and herbs (dill and optional mint). Stir well.
  • Chill: Refrigerate the sauce until ready to serve. For the best flavor, let it sit overnight, but it can be made fresh.

2. Prepare the Veggies

  • Slice the onion, tomato, and cucumber into thin, even pieces.
  • Set them aside for assembly.

3. Cook the Chicken Patties

  • Heat a skillet (preferably cast iron) over medium heat and add butter or ghee.
  • Cook the chicken patties directly from frozen, grilling them until heated through and golden brown.

4. Toast the Bread

  • For Pita Bread: Toast in a skillet with butter or ghee until lightly crispy.
  • For Sliced Bread: Toast one side in a skillet with butter or ghee.
  • Low-Carb Option: Skip the bread and use large romaine lettuce leaves as a base.

5. Assemble Your Plate

  • Place the toasted bread or lettuce on a plate.
  • Add a chicken patty on top.
  • Layer the sliced veggies over the patty.
  • Finish with a dollop of tzatziki on top and a little extra on the side for dipping.

Optional Side:

Serve with homemade fries and dip them in tzatziki for a complete meal.

Enjoy your open-face Greek chicken patty meal as a delicious sandwich or a low-carb alternative!
