  • 4 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp balsamic vinegar
  • Zest of 1 lemon
  • Salt and freshly ground black pepper, to taste

Instructions:

1. Prep the Lamb Chops:
  • If the lamb chops aren’t already frenched (with the bones exposed), you can do it yourself or ask your butcher to prepare them. To french the chops, cut away the meat and fat from the bone, leaving about 2 inches of exposed bone for that “lollipop” look.
  • Pat the lamb chops dry with paper towels. This will help the seasoning adhere better and promote a nice sear.
2. Make the Marinade:
