Once your beef is delivered to the butcher, it will be weighed that same day and the balance will be charged to the card on file. We will then reach out to you with the weight and to gather your specific cutting instructions. When everything is finished, we'll pick it up for you and let you know so you can choose delivery or pickup at the ranch.

After you place you deposit you'll receive a confirmation email with more details about the butchering process. Below is a general estimate, but it gives a good idea of what to expect from a Cut Breakdown:

  • Steaks: 28-32%
  • Roasts: 12-15%
  • Brisket: 5-7%
  • Ribs: 3-5%
  • Stew Meat: 3-5%
  • Flank/Skirt/Hangar: 1-3%
  • Organs: 1-3%
  • Soup Bones: 1-4%
